What you need:
Pasta
Olive oil
Onions – chopped
Garlic – chopped
Small sweet red tomatoes
Roughly chopped spring greens
Red chilli flakes
Black olives
Mint – chopped
Capers
Salt and pepper
Saucepan
What you do:
Cook the pasta, drain, but not completely – this keeps the pasta from drying out
Heat two glugs of olive oil, fry the onion, shake of chilli and garlic until translucent
Add tomatoes and fry together, add spring greens
Add the pasta and swirl through till coated and heated through.
Throw in the capers and mint, 15 seconds swirl – job done.
