What you need:
Good quantity of the tomato sauce base
Good quantity of cooked red kidney beans (or a can or two if you have not had time to cook your own)
Enough beef mince for two (ask the butcher)
Olive oil
Two onions – chopped
Garlic – chopped (as much as you want)
Whole Red chillies (choose your own bravery level. Use dried flakes otherwise)
*Red and green peppers – chopped small
*Mushrooms, washed and sliced
Cumin
Salt and pepper
Saucepan
What you do:
Heat two glugs of olive oil, fry the onion and garlic until translucent
Add the cumin, chillies and mince and brown through
Add the beans
Add the red pepper
Add the tomato sauce base until you have a medium thick consistency
Bring to the boil and then turn the heat down
Let it tick away on a very low heat until liquid has evaporated – see the picture right above. Check and adjust seasoning.
Serve with rice if wanted – green salad goes well, too.
