Spanish Omelette for Two

What you need:

Eggs (four is good for two people)
Olive oil
Onions – chopped
Garlic – chopped
Green and red peppers – chopped small
Small sweet red and orange tomatoes
Roughly chopped spring greens
Red chilli flakes
Salt and pepper
Saucepan
Whisk
Bowl

What you do:

Pre heat the grill so it is good and hot
Heat two glugs of olive oil, fry the onion and garlic until translucent
Add the peppers and tomatoes and fry together, add spring greens
Beat the eggs together in bowl with a whisk, add salt and pepper
Check for police
Add the eggs to the saucepan, and swirl them so they cover the vegetables
Push the edges of the omelette gently away from the edge of the saucepan, but do not be tempted to do anything else
Once the surface of the eggs has gone glossy, take off the heat and pop under the grill until gold brown
We eat this straight from the frying pan, ‘cos it tastes good that way
Goes well with a green salad
