What you need:
Two or three fillets of cooked smoked mackerel (grill them)
Sweet tomatoes – washed
Handful of fresh flat-leaf parsley – washed
Pickled gherkins or cornichons
Two large spring onions, washed and chopped finely
Balsamic vinegar
Olive oil
Arty serving bowl
What you do:
Chop the tomatoes into quarters
Slice the gherkins
Roughly chop the parsley
If wanted – mix the dressing (seven to one of vinegar to oil)
Tear the fish into pieces
Put the tomatoes into the bowl
Add the fish and gherkins and gently stir (this helps the juices from the tomato flavour the fish)
Scatter over the spring onions
Garnish with the parsley
Serve with homemade bread and butter, or new potatoes for a more substantial meal
